Blender Gazpacho
Ingredients:
1 1/2 pounds tomatoes, peeled and seeded
Two garlic cloves, minced
1/2 onion, chopped
One carrot, coarsely chopped
One cucumber peeled and chopped.
One green pepper, seeded and chopped
Two parsley sprigs, chopped
Four tablespoons chopped fresh basil.
juice of 1 lemon
3 cups tomato juice
Directions:
This recipe is a breeze to follow: simply mix all the ingredients, process in batches in the blender, adjust for taste, and chill.
