Blender Gazpacho

Blender Gazpacho

Ingredients:

  1. 1 1/2 pounds tomatoes, peeled and seeded

  2. Two garlic cloves, minced

  3. 1/2 onion, chopped

  4. One carrot, coarsely chopped

  5. One cucumber peeled and chopped.

  6. One green pepper, seeded and chopped

  7. Two parsley sprigs, chopped

  8. Four tablespoons chopped fresh basil.

  9. juice of 1 lemon

  10. 3 cups tomato juice

Directions:

This recipe is a breeze to follow: simply mix all the ingredients, process in batches in the blender, adjust for taste, and chill.
