Ingredients:
One medium eggplant, peeled and diced into 1-inch cubes.
Two ripe tomatoes
salt
One large red pepper, seeded and cut into 1-inch pieces
One medium zucchini, scrubbed and sliced 1/4 inch thick
One medium onion, thinly sliced
Two cloves garlic, chopped
One heaping tablespoon of capers rinsed
One bay leaf
1/4 teaspoon fresh thyme
Salt and black pepper
1/8 cup white wine or cider vinegar
3/4 teaspoons sugar
1/2 tablespoon olive oil
chopped parsley
