Ingredients: 

  1. One medium eggplant, peeled and diced into 1-inch cubes.

  2. Two ripe tomatoes

  3. salt

  4. One large red pepper, seeded and cut into 1-inch pieces

  5. One medium zucchini, scrubbed and sliced 1/4 inch thick

  6. One medium onion, thinly sliced

  7. Two cloves garlic, chopped

  8. One heaping tablespoon of capers rinsed

  9. One bay leaf

  10. 1/4 teaspoon fresh thyme

  11. Salt and black pepper

  12. 1/8 cup white wine or cider vinegar

  13. 3/4 teaspoons sugar

  14. 1/2 tablespoon olive oil

  15. chopped parsley
