Chickpea and Spinach Stew

Ingredients:

Chickpeas, spinach, onions, garlic, diced tomatoes, cumin, paprika, olive oil.

Ingredients:

  1. Two tablespoons of olive oil

  2. One onion, chopped

  3. Three cloves garlic, minced

  4.  Two cans of chickpeas, drained and rinsed

  5. One can of diced tomatoes

  6. One teaspoon cumin

  7. One teaspoon of paprika

  8. 4 cups fresh spinach

  9. Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, cooking until softened.

  2. Add the chickpeas, diced tomatoes, cumin, and paprika. Simmer for about 20 minutes.

  3. Stir in the spinach and cook until wilted—season with salt and pepper.
