Bean and Spinach Soup (Serves 2)

Ingredients: 

  1. 1/2 cup white kidney beans (cannellini), canned or home-cooked

  2. 1/2 cup kidney or red beans, canned or home-cooked

  3. 1/4 cup garbanzo beans (chickpeas), canned or home-cooked

  4. 2 cups fresh spinach, washed, drained, and chopped or 10 oz

  5. frozen chopped spinach

  6. 2 cups vegetable broth

  7. One medium onion, chopped

  8. 1/2 large garlic clove, minced

  9. 1/2 tsp dried oregano

  10. Pepper to taste
